1 - 3/4 CUPS (375 gr.) SUGAR
1/2 CUP (100 gr.) UNSALTED BUTTER MELTED
2 TEASPOONS BAKING POWDER
THREE EGGS
1 TEASPOON VANILLA EXTRACT
4 OZ. (115 gr.) NATURAL WALNUTS
14 OZ. DRY FIGS
2 TABLESPOONS RUM
1 EGG BEATEN
RECIPE
HEAT OVEN AT 350°F
CUT THE FIGS IN TWO OR THREE PIECES AND PLACE THEM IN A BOWL. ADD THE RUM AND MIX OCCASIONALLY UNTILL THE FIGS ABSORBED THE RUM
IN LARGE BOWL MIX FLOUR, SUGAR AND BAKING POWDER.
ADD 3 EGGS, MELTED BUTTER AND VANILLA EXTRACT. MIX.
ADD THE FIGS AND MIX. THE DOUGH WILL BE DRY.
ADD THE WALNUTS AND MIX
DIVIDE THE DOUGH IN THREE.
ON A SLIGHTLY FLOURED SURFACE, ROLL THE DOUGH TO FORM THREE LOGS. PLACE THE LOGS ON A BAKING SHEET AND BRUSH WITH THE BEATEN EGG.
BAKE FOR 30 MINUTES OR UNTIL GOLDEN BROWN. LET THE LOGS COLL A LITTLE.
ON A CUTTING BOARD, CUT THE CANTUCCINI ON A SLANT. ENJOY WITH VIN SANTO. BUONISSIMI!!!
