PUT ALL INGREDIENTS, EXCEPT THE FRYING OIL, IN A LARGE BOWL AND MIX
DUST THE BOWL WITH A LITTLE FLOUR, FORM A BALL WITH THE DOUGH, DUST WITH MORE FLOUR. COVER WITH SARAN WRAP AND SET A SIDE TO REST ABOUT 20 MINUTES
TAKE THE DOUGH AND DIVIDE IT IN HALF. ON A SLIGHTLY FLOURED SURFACE, ROLL THE DOUGH TO FORM TWO LOGS ABOUT 1/2 INCH THICK. CUT THE LOG IN 1/2 INCH PIECES. USING YOUR HANDS ROLL THE DOUGH IN LITTLE BALLS.
HEAT THE FRYING OIL IN A DEEP FRY PAN AND COOK THE CASTAGNOLE, JUST A FEW AT A TIME
PUT THE CASTAGNOLE ON KITCKEN TOWELS TO DRAIN THE EXCESS OIL
ROLL THE CASTAGNOLE IN GRANULATED SUGAR
