PASTA CAPRESE

1/2 POUND FRESH
MOZZARELLA CHEESE

1/2 POUND RED CHERRY TOMATOES

5 TBSP. EXTRA VERGIN OLIVE OIL

FRESH BASIL LEAVES

SALT AS NEEDED

INGREDIENTS FOR THE PASTA:

1/2 POUND (225 gr.) SPAGHETTI PASTA

WATER

Immagine
SALT TO TASTE

RECIPE

1)
In a serving bowl put the cherry tomatoes cut crosswise in half, salt, olive oil and basil.
TOSS.

Dice the mozzarella cheese and add to the tomatoes with more salt and olive oil.

3)
TOSS and let stand till the spaghetti are cooked.

Immagine
4)
By now the water will be boiling, add salt and put pasta in the water.
Cook about one minute less them what is written on box. Drain.

5)
Add the drained spaghetti to the tomatoes and mozzarella and toss.

Immagine
6)
Serve hot.
This recipe does NOT call for parmigiano cheese.
