HEAT OVEN AT 200°F
START TO PREPARE THE MERINGUE:
IN A LARGE BOWL PLACE THE EGG WHITES AND START TO MIX WITH ELECTRIC MIXER. ADD HALF OF THE SUGAR, MIX. ADD THE OTHER HALF AND FINISH TO MIX UNTIL THE EGG WHITES ARE FIRM.
WITH A PIPING BAG, SHAPE THE MERINGUES ON PARCHMENT PAPER. PLACE IN THE PREHEATED OVEN FOR AT LEAST THREE HOURS OR OVERNIGHT WITH A WOODEN SPOON INSERTED SO THAT THE OVEN DOOR REMAINS CRACKED OPEN.
ONCE THE MERINGUES ARE COOKED START TO MELT THE CHOCOLATE IN A DOUBLE BOILER.
DUNK THE FLAT SIDE OF THE MERINGUES IN THE CHOCOLATE AND PLACE THE MERINGUES BACK ON THE PARCHMENT PAPER. SET A SIDE TO COOL, THE CHOCOLATE MUST HARDEN (YOU MAY PLACE THEM IN THE REFRIGERATOR TO DO FASTER)
WITH ELECTRIC MIXER WHIP THE WHIPPING CREAM WITH THE POWDERED SUGAR UNTIL FIRM.
ASSEMBLE THE MERINGUES USING A PIPING BAG, PIPE THE WHIPPED CREAM ON THE CHOCOLATE SIDE OF A MERINGUE AND PLACE ANOTHER MERINGUE ON THE WHIPPED CREAM AS A SANDWICH.
PLACE IN SMALL CUPCAKE SHELLS AND ENJOY!!
