TYPICAL CHRISTMAS COOKIES FROM SIENA, MADE WITH ALMONDS

2 EGG WHITES
10 OZ. (300GR) PEALED NATURAL ALMONDS
2 CUPS (400 GR) CONFECTIONARY SUGAR
HEAT OVEN AT 325°F
In medium bowl, with mixer at high speed, beat egg whites until soft peaks form. Set a side.
In medium bowl finely chop the almonds
Put the 1 cup (half) sugar and the almonds in the egg whites and fold with a spatula
Refrigerate for about 4 hours
Make about 20 balls and shape into ovals. press one side on the remainder confectionary sugar.
Put the ovals with the sugar facing up, on the baking sheet and bake 15 minutes.
Take out of the oven and make coll down
Using spatula, take off the cookie sheet, being very careful because they are delicate.
