HEAT OVEN AT 350°F
PLACE THE EGG WHITES AND PINCH OF SALT IN A MEDIUM BOWL. BEAT UNTILL THE EGG WHITES ARE VERY STIFF. SET A SIDE
PLACE BUTTER AND SUGAR IN A LARGE BOWL AND MIX WITH ELECTRIC MIXER
ADD THE MELTED CHOCOLATE AND MIX
ADD THE EGG YOLKS AND MIX
ADD THE SIFTED FLOUR AND BAKING POWDER, MIX WELL
USING A SPATULA, FOLD THE EGG WHITES IN THE CHOCOLATE MIXTURE
LINE A 9-INCH SPRING FORM PAN WITH PARCHMENT PAPER AND BUTTER IF YOU LIKE A THICKER AND TALLER CAKE (YOU WILL TASTE THE CHOCOLATE MORE) LINE AN 11-INCH SPRING FORM PAN WITH PARCHMENT PAPER AND BUTTER IF YOU LIKE A THINNER AND LOWER CAKE (YOU WILL TASTE THE PEARS MORE)
ADD THE PEARS TO THE BOTTOM OF THE PAN, THE PEARS MUST BE VERY RIPE OR THEY WILL NOT COOK
ADD THE CHOCOLATE MIXTURE AND PLACE IN THE PREHEATED OVEN FOR 50 TO 60 MINUTES OR UNTIL COOKED
TAKE OUT OF THE OVEN AND COOL
