HEAT OVEN AT 350°F
IN A LARGE BOWL, MIX THE APPLES WITH THE LEMON JUICE, LEMON ZEST AND CINNAMON
IN A LARGE BOWL, MIX THE EGGS WITH THE SUGAR
ADD THE BUTTER AND MIX
ADD THE FLOUR AMD THE BACKING POWDER AND MIX
PLACE SOME APPLES A SIDE TO DECORATE THE TOP OF THE CAKE. ADD THE REMAINING APPLES TO THE FLOUR MIXTURE AND GENTLY FOLD THE APPLES IN THE BATTER WITH A SPATULA
PLACE THE MIXTURE IN A BUTTERED AND SUGARES 9 INCH SPRING FORM PAN
DECORATE THE TOP OF THE CAKE WITH THE APPLES AND SPRINKLE MORE CINNAMON OVER THEM. SPRINKLE SOME BROWN SUGAR AND PLACE IN THE PREHEATED OVEN FOR ABOUT 50 MINUTES
WHEN THE CAKE IS READY AND A TOOTHPICK INSERTED IN THE CENTER COMES OUT CLEAN, TAKE OUT OF THE OVEN
