IN A LARGE PAN, OVER MEDIUM HEAT, PUT THE OLIVE OIL, PARSLEY AND RED PEPPER (OPTIONAL)

ADD THE PEAS AND THE TOMATO. STIR AND COOK, COVERED ABOUT 20 MINUTES, THE LAST MINUTES TAKE THE LID OFF TO REDUCE. THIS DISH IS VERY GOOD IF YOU PREPARE IT THE DAY AHEAD AND HEAT IT BEFORE SERVING.
